Baked in Banawa, one layer at
a time
We are a small Cebu cake studio with a big sweet tooth — cube cakes, chewy cookies and celebration cakes, all made by hand in small batches.
It started as a home kitchen, a hand mixer and a short list of friends who wanted a cake that tasted as good as it looked.
The Skinny Baker grew out of that first batch. Word spread through Cebu the way it always does — someone posts a slice, someone else asks where it came from. Soon the little square cakes were being boxed every morning for birthdays, debuts, office parties and quiet Tuesdays that needed a treat.
We kept the name and the philosophy: bake in small batches, use ingredients we would happily eat ourselves, and finish everything by hand. No fillers, no premix, no cake that has been sitting in a chiller for days waiting to be chosen.
Today there is a cafe counter in Banawa where you can sit with a matcha latte and a warm cookie, and a kitchen behind it still piping every celebration cake to order. The menu has grown — pastas, rice plates, fruit teas — but the matchamisu and the square cake that started it all are still the ones we make most.
Four steps, checked by hand
The kitchen runs on a simple rule: if it is not good enough to serve a friend, it does not go in the box.
Sourcing
Butter, cream, Belgian chocolate and fruit, bought in small quantities so nothing is ever old.
Mixing & baking
Batters are mixed to order each morning and baked in small tins, never in bulk trays.
Filling
Mascarpone, cream cheese and fudge are whipped in-house and layered by hand, square by square.
Finishing
Piped, torched and boxed with a handwritten note before it goes out the door.
“I would rather bake a hundred small cakes properly than one big cake in a hurry. That is the whole recipe.”
